Materials needed for this easy baked frittata recipe

  • First and foremost, you need a quality 9x13 baking dish. I liked my cast iron pan because it bakes beautifully and looks nice for your brunch tablescape.
  • No frittata dish is complete without some beautiful leafy greens, so make sure you have quality power greens. When I'm in a pinch on time, or don't have fresh greens available, I use a prepackaged salad blend. However, any good mix of spinach, lettuces, chard, arugula, and herbs like cilantro, parsley, and dill will work beautifully! Your frittata looks really pretty with all of the color, and adding greens is a great way to make it a healthy brunch dish that is full of vitamins and nutrients.
  • Make sure you buy a dozen eggs for this recipe! It calls for all 12, and you want to have enough for other items too.

How to lock in flavor in a baked frittata

There are three key ingredients that you must not skip to ensure a mind-glowingly delicious meal!

  1. Herbs - Absolutely use basil! I also love parsley. They both provide that robust taste that pairs well with the savory factor.
  2. Parmesan - Get a high quality block of parmigiano reggiano , that you grate yourself, if possible. This gives is the richest and deepest flavor.
  3. Salt. I always opt for pink Himalayan salt, because it isrich in mineral content that can help balance your body’s pH levels. This is important because your pH needs a healthy acid-to-alkaline ratio, to ensure optimal health. A proper pH also helps support your immunity, supports healthy thyroid function, and encourages good digestion (source). Since pink Himalayan salt contains sodium as well as other electrolytes, it has a direct effect on the pH of your blood.

If you don't have these, your frittata will be bland, so don't skimp on this part! You MUST use fresh basil and fresh parmesan cheese in this recipe. TRUST ME.

Tips to prevent frittata being runny or watery

There are a couple of things you DON'T want to happen when making a frittata:

  1. Runny, watery frittata
  2. Middle of the frittata not cooking
  3. Frittata isn't setting

These are all the most common problems people run into when making this spectacular egg dish. But with this recipe, you won't have that issue! You know your frittata is done when internal temp is 160 degrees Fahrenheit, and the middle doesn't jiggle when removed from oven.

  • Bake it in a heavy 9x13 baking dish. This ensures even heat distribution and best results.
  • Bake until internal temp is at least 160 degrees F, which is the recommended time for eggs. On my oven, this is at least 50 minutes (depending on your altitude and oven).
  • Let it set for 10-15 minutes. THIS IS IMPORTANT!

These three steps will give you the perfect, fool-proof consistency every time.

I made this for a potluck supper last night and everyone raved about it!

There were a couple of small changes I made. I started by putting some thinly-sliced parcooked potatoes on the bottom of the 9x13 baking dish (which was coated with pan spray as instructed. Then I wilted my spinach and squeezed/drained as much moisture out of it, distributed it in the baking dish on top of the potato slices. I didn’t have any other greens, so I just did spinach. I only used fresh basil as an herb, but I think next time I will experiment with some others as well. Also, I used the whole milk option rather than the heavy cream.

I generally use pastured eggs, so I couldn’t get the eggs to look “pale yellow” - those yolks are deep yellow, sometimes orange (full of omega-3s). But they lightened a little, and came out perfect. 😉

I will make this one again and again! YUM. 😋

This was so good, quick & easy and makes enough to share. Flavors mixed well. I forgot to add tomatoes so served some sliced on the side.
I used a large onion, fresh chopped basil, and 3/4 Cup sour cream with 1/4 Cup of milk.
    I’m saving this recipe!!!!!

    • The Butter Half says

Hey CJ! I have never tried to freeze it. However, in my experience, it keeps well in the refrigerator and develops flavor for up 5 days. I recommend prepping it ahead of time that way. I am not sure the eggs would hold and reheat well after being frozen.

FAQs

How does the frittata get its fluffy texture? ›

Dairy, like milk or cream, is a crucial component of frittatas. This is the ingredient that gives frittatas their signature creamy, fluffy texture. Without this important addition, frittatas cook up flatter and a bit more dense.

Does a frittata need milk? ›

Do you add water or milk to a frittata? Let's just say that full-fat milk or heavy cream is the best way to go. Water will work, but you won't get the density and rich texture you'll get when you use a full-fat liquid. Sour cream, crème fraîche or yogurt can be substituted for the heavy cream in this recipe.

Does a frittata contain gluten? ›

In its simplest explanation, a frittata is an egg dish that is similar to an omelet or quiche without a crust (hello gluten free).

How do you keep frittata moist? ›

Adding a bit of dairy, whether it's cream or thick yogurt, is essential for getting the moisture and creaminess of the frittata just right. For every dozen eggs, use a half cup of dairy.

What is the frittata formula? ›

The Frittata Formula

Frittatas are incredibly simple. For every six large eggs, you'll want to mix in ¼ cup of milk or cream, ¼ cup of cheese, and about 3 cups of meat or vegetables. The small amount of milk and cheese keeps the eggs soft and creamy and the meat and vegetables give you endless options.

When making a frittata, which ingredient should be pre-cooked prior to adding it to the egg mixture? ›

Tough vegetables like potatoes, squash and onions need to be pre-cooked since they will not have time enough to soften before the eggs are done. Raw meats such as bacon and sausage also need more time and heat to cook through safely, so get them prepped before your other ingredients.

How to tell when frittata is done? ›

The eggs should be cooked through, not runny and a knife should come out clean when inserted into the centre. You can also give the skillet a gentle shake to determine if it is done; a runny frittata will jiggle when you shake the skillet.

When determining how many eggs to use in a frittata generally? ›

The egg to dairy ratio: If you are making a smaller frittata use 6 eggs and 1/4 cup of dairy, and if you are making a larger frittata use 12 eggs and 1/2 cup of dairy. You can use milk, sour cream, yogurt, milk kefir, or any other form of dairy you have on hand - just make sure it is full fat.

What kind of pan is best for frittata? ›

Use a cast-iron skillet.

The best choice for making frittatas, cast iron skillets can safely go from stovetop to oven, and they conduct heat well and evenly. Seasoning a cast-iron pan gives it a non-stick quality, so a well-seasoned skillet will result in the easiest slicing & serving.

What makes eggs gluten-free? ›

Eggs are naturally gluten-free. Any gluten present in a hen's diet is completely broken down during the hen's digestive process, meaning there is no gluten that makes it way to the egg.

What brand of eggs are gluten-free? ›

Are All Eggs Gluten Free? Real eggs, no matter their grade, size or color, are naturally gluten free. Whether the egg comes from a chicken, duck, or another bird doesn't make a difference.

Are potatoes gluten-free? ›

The simple answer is yes — potatoes are gluten-free. Gluten is a type of protein found in wheat, rye, barley, and other grains. Potatoes aren't grains, they're a type of starchy vegetable. That's good news for people who can't tolerate gluten because they have celiac disease or gluten intolerance.

What goes well with frittata? ›

Classic sides for a frittata include a fresh green salad, fruit salad, crispy potatoes and/or some fresh bread, scones or toast. Bacon, ham or sausage are also popular side dishes. In Italy and Spain, frittata is often cooled to room temperature and served as a snack or antipasti.

What kind of cheese is good in frittata? ›

Freshly grated parmesan is a solid choice that always pairs well with eggs. Other good options include goat, feta, cheddar, mozzarella or Gruyere. Pairing two cheeses together is also a great choice. Dollops of goat cheese would be delicious on top of this spinach frittata.

Do you have to flip a frittata? ›

Some cook the egg dish entirely on the stovetop, while others finish it in the oven. Here's the thing: The stovetop-only approach requires you to flip the giant, still-runny egg pancake in the skillet.

What is the key to making a fluffy light texture high quality omelet? ›

For restaurant quality fluffy eggs, whisk them!

By getting more air in the mixture you're more likely to get that fluffy finish, so get stuck in and give them a good mix for 30 seconds until the top layer has a thick, frothy foam.

What part of the egg makes things fluffy? ›

Egg whites are drying agents and too many will reduce the moisture content of the batter. To achieve extra fluffy cakes, especially when making vanilla cakes, separate the egg whites from the egg yolk, make the batter with the egg yolks, beat the egg whites separately and fold it into the batter in the end.

Why is my omelette fluffy? ›

This is the key to making fluffy omelettes, just whisk the egg yolk and egg white separately. This helps in giving that perfect restaurant-like texture to the homemade omelettes. Also make sure you whisk the egg portions in a way that they turn frothy, this will add on the fluffiness of the omelettes.
