This recipe is great for those following a Vegan, Vegetarian, Gluten Free, or Lectin Free lifestyle.

ALTERNATIVE TO OATMEAL

This tiny ancient grain is a great alternative or replacement to a traditional bowl of oatmeal for breakfast. It is gluten free, phytate free and a healthy resistant starch.

This means that amaranth is unlikely to spike your blood sugar levels. With the benefit of supporting your gut microbiome, improving your insulin sensitivity and reduce body fat.

If you develop allergies or inflammation from oats or wheat products, then amaranth is a perfect alternative for you. Remember to choose organic, non-GMO options to avoid glyphosate and other pesticide residue.

AMARANTH PORRIDGE BENEFITS

Is amaranth gluten free? Yes. It makes for a great substitute for a bowl of oatmeal or other breakfast porridge. Amaranth is also a great addition to soups or served as a grain side dish for lunch or dinner paired with vegetables.

I use amaranth in place of recipes that call for polenta or couscous. You can also swap it in soup recipes that call for pasta, couscous, quinoa, barley and other grains.

Try soaking the amaranth overnight for even better assimilation. Strain through a fine mesh strainer. Then add to a pot with fresh water and cook as described below.

HOW TO COOK AMARANTH

This ancient grain is very easy to prepare. You can find it all over the world, so I often purchase it when traveling to enjoy as breakfast in my Airbnb.

Similar to oatmeal, it is a 1:2 ratio for preparation. For example, all you need is the following.

1 cup amaranth

2 cups water

Bring to a boil, then simmer for 15-20 minutes. Stirring occasionally till all the water is absorbed.

SAVORY AMARANTH RECIPES IDEAS

Try these toppings on your savory amaranth breakfast bowl for variety, added fiber, protein and flavor.

  • Hardboiled egg
  • Steamed kale, chard, zucchini or other leafy green or vegetable
  • Flax seed oil, hazelnut oil or walnut oil
  • Chis seeds, sesame seeds or ground flax seed
  • Nuts such as walnuts, hazelnuts, sliced almonds, pistachios or cashews
  • Fresh herbs such as rosemary or thyme
  • Spices such as fresh turmeric or ginger

CHEF TIP

Make a double batch for breakfast meal prep. The porridge is delicious hot or cold.

You can swap the whole flax seeds for chia seeds.

Cooked amaranth holds well in the fridge for one week.

Description

Looking for a breakfast alternative to oatmeal? Amaranth is a protein and fiber rich breakfast alternative that is ready in 15 minutes.

Ingredients

Scale

  • 1 cup amaranth
  • 2 TBSP flax seeds
  • 2 cups water
  • ½ bunch of fresh spinach, or two generous handfuls of baby spinach
  • Drizzle of organic, extra-virgin olive oil
  • Pinch of flaked sea salt

Instructions

  1. Add amaranth, flax seeds and water to a medium pot. Bring to a boil, then down to a simmer for 15-20 minutes. Stir occasionally till water is absorbed.
  2. While amaranth is cooking, blanch the spinach. Add water and a generous pinch of salt to a small pot and bring to a boil. Add the spinach and immediately drain.
  3. Assemble your savory breakfast bowl by adding a half of the amaranth porridge and blanched spinach. Top with a generous drizzle of olive oil and pinch of flaked sea salt.
