500g cob loaf

1 tbsp Coles classic olive oil

1 small onion, finely chopped

200g shortcut bacon rashers, diced

2 tbsp chopped chives, plus extra to serve

250g block cream cheese, softened

2/3 cup (160ml) cream

2/3 cup Bulla Light Sour Cream

1 1/2 cups grated cheddar cheese

1 French stick or baguette, sliced

Preheat oven to 180C/160C fan-forced. Line a large baking tray with baking paper.

Cut 4cm off top of cob loaf (500g cob loaf) to form lid. Scoop bread from centre of loaf, leaving 1.5cm edge. Tear or roughly chop bread pieces.

Heat oil (1 tbsp Coles classic olive oil) in a large frying pan over medium heat. Add onion (1 small onion, finely chopped) and bacon (200g shortcut bacon rashers, diced). Cook, stirring, for 5 minutes or until bacon is browned and onion has softened. Remove from heat.

Add chives (2 tbsp chopped chives, plus extra to serve) to bacon mixture. Stir in creamed cheese (250g block cream cheese, softened). Mix until combined. Add cream (2/3 cup (160ml) cream), sour cream (2/3 cup Bulla Light Sour Cream) and grated cheese (1 1/2 cups grated cheddar cheese). Season with salt and pepper.

Spoon mixture into loaf. Arrange lid, bread pieces and sliced baguette (1 French stick or baguette, sliced) in a single layer around loaf. Bake for 20 minutes or until lightly toasted.

Sprinkle top of dip with extra chives. Serve warm.

Want to know how to make a cob loaf?
It all starts with the cob loaf carving, which could really be a national sport here in Australia. And, it's easier than it looks to create the signature cob loaf bowl. Cut a lid out from the top of the cob loaf (see step 2 of this recipe), then hollow out the bread (scoop bread using your hands) leaving a shell that's sturdy enough to hold robust cob loaf fillings! It's great to pull out a mixture of large and smaller pieces of filling to bake in the oven, because these form the vessels for your cob loaf dip. Your cob loaf bread will become golden and crisp in the oven, so it's perfect for dipping. We also bake a French bread stick for extra dipping materials!
Of course, once all the filling bread pieces have been eaten, you and your guests and eat the structural outside shell and lid of your cob loaf, too!
