If enjoying this coconut cream for breakfast we recommend increasing the protein for a more filling and nutritious meal.
If you tolerate dairy, add 2 tbsp whey protein isolate per serving. Add some water for a runnier consistency if needed.
If you don't eat dairy products, eat a couple of eggs on the side.

It's 88gm of fat, not carbs. The carb count is 6-8 grams depending on your brand.
Also this is far from low carb. 88g of carbs in just the coconut cream

That would depend on how low you are limiting your carbs. Just keep an eye on the serving size and the carb count for the amount of coconut you are adding.

Couldn't get it to whip up, maybe because I blended in frozen blueberries instead of whipping the cream first..but I just made it into a smoothie with avocado and ice instead :)

so the only canned coconut cream I could find in my local store says it has 18 grams of carbs for every 2 tablespoons. So since this is supposed to be a low carb recipe you should be using unsweetened coconut cream? What brands are everyone else using that keeps this recipe low carb?

1c gram/chickpea flour is 43g carbs.
Different brands of coconut flour may contain widely varying amounts of carbs, depending on the fiber content. We use the nutritional information for Amanprana Coconut fibers/coconut flour, which is really low in net carbs. The other issue for consideration is how the different flours behave in baking as they are all different.63

Many commercial creamers have added sugar. Coconut cream is much thicker in consistency than coconut milk or traditional creamers.

So the nutrition listing on here and via posts is way off. You would use unsweetened coconut cream for a Keto diet and your totals if you still follow this recipe would be only 3g net carbs per serving. MAYBE 4 since the coconut cream lists as under 1g carbs per 2 tbs serving and you need 4 servings of coconut cream (8 TBS) to make 1 serving of this recipe. It tastes quite nice but only 3-4g not 9 which would take this right out of anyone’s menu considering Keto.

The carb count for unsweetened coconut cream can vary by brand. If you've found one that is very low carb, congratulations. Our calculations have 5g carbs from the coconut cream and 3g carbs from the strawberries.

In this recipe, we use coconut cream which contains 35% fat. Many times, the cans of coconut cream have extra liquid in there as well. You can stir the liquid in with the more solid cream section if that works better.

I got Thai kitchen coconut cream, 240 calories for 1/2 cup. If you're using a coconut cream that's much higher in fat/calories as the nutrition value indicates, you need to add that in the recipe. Otherwise your macros are useless.

I’m not sure which coconut cream you are using, but Savoy brand, which is pure coconut cream (NO sugar added) is only 2.85 carbs per 100 grams! There are brands that are sweetened. Don’t get those! I buy Savoy by the case because I live in a small rural town that doesn’t carry it and have to buy it in Phoenix.
