Creamy Sun Dried Tomato Chicken Zoodles
This sauce. THIS SAUCE.Okay. Let me back up for a sec.Sun dried tomatoes and garlic and parmesan cheeseinfused in a cream based sauce, enveloping crispy, golden pan fried chicken strips and zoodles forthe craziest low carb comfort food.
ZOODLES
You don’t need to spend your whole entire pay check on a Zoodle maker. Mine looks like this:
However, if you don’t have one..or can’t find one, you canmake fettuccini styleribbonswith a normal vegetable peeler.
With minimal ingredients, abeautifully rich and creamysauce is ready in less that 10 minutes with the extra additionof extra sun-dried tomatoes, a tonne of parmesan, red chilli flakes and dried basil.
Simply add your Zoodles for a healthy take on pasta (or add pre-cooked pasta if you like), and dinner is done!
Serve this, and you’re family and friends won’t miss pasta. They won’t even be mad at you.

Serves: 6 people
Ingredients
- 1 tablespoon butter
- 700 g | 1 1/2 lb skinless chicken thigh fillets , cut into strips
- 120 g | 4oz fresh semi-dried tomato strips in oil , chopped *See Notes
- 100 g | 3.5oz jarred sun dried tomatoes in oil , chopped
- 4 cloves garlic , peeled and crushed
- 300 ml |1 1/4 cup thickened cream , reduced fat or full fat (or half and half)
- 1 cup shaved Parmesan cheese
- Salt to taste
- Dried basil seasoning
- Red chilli flakes
- 2 large Zucchini (or summer squash), made into Zoodles (use a vegetable grater if you don't have a Zoodle grater)
Instructions
Heat the butter in a pan/skillet over medium high heat. Add the chicken strips and sprinkle with salt. Pan fry until the chicken is golden browned on all sides and cooked through.
Add both semi-dried and sun dried tomatoes with 1 tablespoon of the oil from the jar (optional but adds extra flavour), and add the garlic; sauté until fragrant. (While the chicken is browning, prepare your Zoodles with a Zoodle maker OR with a normal vegetable peeler.)
Lower heat, add the cream and the Parmesan cheese; simmer while stirring until the cheese has melted through. Sprinkle over salt, basil and red chilli flakes to your taste.
Stir through the Zoodles and continue to simmer until the zoodles have softened to your liking (about 5-8 minutes) and serve.
Notes
*If you can't find semi-dried tomato strips (usually found in a deli), sub with extra jarred sun-dried tomatoes

My family loves this dish and we make it often. I like it better served over spiralized butternut squash. They have a firmer texture than the zucchini. Some capers also add some great flavor to this dish!

This is SUCH a fabulous, rich, flavorful dish! I love the taste of sun-dried tomatoes and cream together. Tastes like a dish you’d get at a nice restaurant. Definitely would be just as delicious with mushrooms added or substituted for the zoodles and over a chicken breast, but amazing just as written. Thank you!Reply

This was absolutely delicious made it for me and my grandma and we both loved it!! Only thing I changed was the cheese, I didn’t have Parmesan and home so I substituted it for Romano and it was great!!

One of the best Keto dishes I ever made, a new favorite for sure!
Since I couldn’t find “thickened cream” I substituted with 200g whipped cream (Schlagsahne) + 125g Creme Doublé.
Turned out perfect!
Although with a common potato peeler I just put the fettuccine style zoodles in the same pan, no simmering in water since they turned out too soft, straight in the pan is more like “al dente”… ?Reply

I came across your website yesterday whilst searching for low carb dinners and decided to make this dish. I wasn’t too sure about so many sun-dried tomatoes but WOW this dish is absolutely delicious!! I just used the sun dried tomatoes in oil from a jar as I couldn’t find the semi dried ones and I also substituted the cream for mascarpone cheese. This dish is super easy to make but is restaurant quality. Feeding a family of four is never easy but this was voted a real winner by all. If like my family you have a good appetite, add extra chicken!Reply
